That being said, we are on our way, and hopeful that this challenge will last well into the new year. We have only consumed leftovers out of the fridge so far today, and not actually cooked any new meals, so the challenge does not seem to have sunk in yet. In due time, though, I predict that it will become all too real.
I considered taking "before" pictures of what we have to work with, but to be honest, I am embarrassed to do so. We have a ridiculous amount of food in our freezers, fridge, pantry, and canning storage area. Seriously, we have a wealth of food--so much so, I am nearly ashamed at what we have amassed in our fishing, hunting, and gardening pursuits over the past year or so. There are so many people who hunger, who am I to photograph what we have? It seems arrogant and self-righteous. I am hesitant to do so. However, I really want to see tangible progress as we move forward through our challenge. Thoughts?
