EASY FRUIT COBBLER
- 3/4 cup all purpose flour
- 3/4 cup white sugar + 1 Tbs. sugar
- 3/4 cup milk
- 1 tsp baking powder
- 1/4 tsp salt
- 4 Tbs. butter
- 2 cups fresh cut up fruit (I've had great success with berries, peaches, nectarines, apples, cherries, etc. Stone fruit is best, in my opinion)
In a glass 8x8 pan, put the butter in, in pieces. Put the glass dish in the oven. Turn it on to preheat to 350 degrees F. The butter will melt as the oven preheats.
In a separate bowl, whisk together all of the dry ingredients-- except the 1 Tbs. of sugar. Whisk in the milk, until you get a thin, lump-free batter.
When the butter is melted in the pan, pour in the batter. Top with fruit and sprinkle with remaining sugar. DO NOT STIR.
Bake at 350 for 45 to 60 minutes.
FRUIT CURD MOUSSE
1 cup cold whipping cream
1 jar Dickinson’s Fruit Curd—I used coconut
1 block of cream cheese
Whip the whipping cream without sugar until stiff peaks form. In a separate bowl, stir together the cream cheese and the curd until they are soft and well incorporated. Fold in the whipping cream. Pour into four glasses and serve chilled, or put into a pie shell and serve as a cheesecake-type no-bake pie.
