The coconut curd finally bit the dust. A rough mock-up of a coconut cream pie was the result. It wasn't so much like coconut cream pie, as it was more like coconut no-bake cheesecake, but it was still really good. I made a homemade graham cracker crust from a recipe I found here, and the recipe for the inside stuff came right off of the label on the jar of curd. I have reposted it here--(it is the second recipe on that page).
In other news, I successfully made one of those barters today that I've already mentioned...some of my apple pie filling for a gallon of milk! WE HAVE REAL MILK AGAIN! At least for now.
